This is a good and fast weekly vegetarian dinner and pineapple fried rice is a perfect balance of sweet and salty and here is a simple and delicious lunch concept .Pineapple fried rice are fast and simple weekend meal that is so much cheaper, tastier and healthier than snacks. Pineapple fried rice with red bell pepper, cashews and cilantro, sweet and spicy pineapple. . Putting some sparkle in your leftover rice is a wonderful way.

  • 3 cup cooked rice
  • 1/2 cup frozen peas, thawed
  • 1 tsp Sriracha
  • 2 green onions, thinly sliced
  • 1 red bell pepper, diced
  • 2 tbsp coconut oil
  • 1 cup diced fresh pineapple
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 1/4 cup cashews, chopped
  • Juice of 1 lime
  • 2 tbsp low-sodium soy sauce
  • 2 large eggs, beaten


  1. Heat oil in a medium heat big skillet. Add onion, tomatoes, and pineapple and boil for about 5 minutes until vegetables are tender and caramelized with pineapple. Incorporate garlic and cashews and boil for 1 minute more until fragrant.
  2. Incorporate rice and peas, add lime juice, soy sauce, and sriracha. Cook about 3 minutes more to coat and hot rice.
  3. Push rice and add eggs to one side of the skillet. Remove until almost completely cooked and fold into a rice blend.
  4. Garnish and serve rice with green onions.
